More than 2500 years ago, a complex irrigation system was built here by the Zapotecs, which is why it is assumed that Hierve el Agua was a sacred site for the Zapotecs.

Hierve el Agua was created over thousands of years by calcareous spring water, which formed the mineral waterfalls that are visible today and appear frozen. In pre-Columbian times, the Zapotecs channelled the water to irrigate their fields in the region and used the area for agricultural purposes.
