Monte Albán, one of the oldest and most impressive archaeological sites in Mexico, served as the Zapotec capital and was an important cultural and political centre. After the arrival of the Spanish in the 16th century, Oaxaca became the capital of the viceroyalty of the same name. The region experienced a mixture of indigenous traditions and colonial influences that shaped its development and cultural identity. Oaxaca is the main producer of chocolate in Mexico and is also the home of mezcal, a liquor made from agave that is very similar to tequila. In many types of mezcal, a caterpillar is placed in the bottle, but this is merely a sales promotion.
