Tacos

The Mexican classic
Ingredients
  • 4 corn tortillas (or wheat tortillas)
  • 200 g beef, chicken or pork, thinly sliced
  • 1 tomato, diced
  • 1/2 onion, chopped
  • Coriander to taste
  • 1 lime, cut into wedges
  • Salsa or guacamole to serve
  • Some oil for frying
Preparation
  1. Heat a frying pan over a medium heat and add a little oil.
  2. Fry the strips of meat until they are cooked through and golden brown.
  3. While the meat is frying, briefly heat the tortillas in a separate pan until they are soft and lightly browned.
  4. Place the fried strips of meat on the warmed tortillas.
  5. Sprinkle the tacos with diced tomatoes, chopped onions and coriander.
  6. Squeeze some lime juice over the filling and serve the tacos warm.
  7. Serve with salsa or guacamole to taste.

Guacamole

The fresh avocado dip for every occasion
Ingredients
  • 2 ripe avocados
  • 1 tomato, diced
  • 1/2 onion, finely chopped
  • 1 lime (juice)
  • 1-2 tbsp chopped coriander
  • Salt and pepper to taste
  • Optional: 1 jalapeño, deseeded and finely chopped, for a spicy flavour
Preparation
  1. Cut the avocados in half, remove the pits and spoon the flesh into a bowl.
  2. Mash the avocados with a fork until a smooth or slightly chunky consistency is achieved, depending on your preference.
  3. Add the diced tomato, chopped onion and coriander.
  4. Squeeze the juice of the lime over the mixture and mix well.
  5. Season to taste with salt and pepper and add the chopped jalapeño if desired.
  6. Serve immediately or cover with cling film to prevent oxidation.

Quesadillas

The crispy snack with cheese filling
Ingredients
  • 2 corn tortillas (or wheat tortillas)
  • 100 g cheese (e.g. cheddar or gouda), grated
  • Optional: chicken strips, beans, vegetables (peppers, onions)
  • Some oil for frying
Preparation
  1. Heat a pan over a medium heat and add a little oil.
  2. Place a tortilla in the pan and sprinkle it evenly with the grated cheese.
  3. Optional: Add chicken, beans or vegetables to taste.
  4. Place the second tortilla on top and fry the quesadilla until the cheese has melted and the tortilla is golden brown.
  5. Carefully turn the quesadilla over and fry the other side until golden brown.
  6. Cut the quesadilla into quarters and serve warm with salsa or guacamole.
